感動しました✨

“Wagashi” directly translates to “Japanese confectionery,” and it’s an essential part of Japanese culinary culture 🇯🇵

I had the privilege of experiencing a beautiful 8-course wagashi & tea omakase at @999_kukuku in Roppongi and it was nothing short of magical.

Each course, created by wagashi artisan @fujita_kaito999 told a story of Japan’s rich traditions and seasonal beauty. The menu changes every single month incorporating seasonal ingredients and this month’s course includes early spring flavors like ume and nanohana 🌱

Each dish is assembled right in front of you and it was like I was watching a show — I was mesmerized! 🤩
What made it even more incredible was the different teas that were paired with each course. Also, the plates and cups they picked were STUNNING!
The delicate textures, vibrant colors, and even temperatures of each dish were all so thoughtfully combined. I’ve never experienced anything quite like this course!

Fun fact: While Wagashi dates back to the Heian period (794-1185), it truly became refined during the Edo period (1603-1868), when it was created to balance the bitterness of matcha in Japanese tea ceremonies.

Every bite was a true work of art and I want to go back to experience a different month’s beautiful wagashi one day 🥹

初めての和菓子とお茶のおまかせコースを体験して、和菓子の概念が変わりました👏
@999_kukuku の8品おまかせ和菓子とお茶のコースは本当に素晴らしかったです！

毎月変わるメニューで、今月は春の初めを感じる梅や菜の花など、旬の素材が使われていました。
和菓子職人の @fujita_kaito999 さんが丁寧に一品一品作り上げていくのを目の前で見ることができて、まるでショーを見ているようでした。

さらに素晴らしかったのは、各コースにぴったりのお茶がペアリングされていて、和菓子一品一品の味わいをより引き立ててくれるところ。お皿やカップも細部にまでこだわって選ばれていて、どれも本当に美しかった！
色や食感、温度のバランスが細かく考えられていて、まさに芸術作品のようでした。

いつか違う月の和菓子も食べてみたいと思いました🥹

“Sweet potato” is a type of Japanese sweet potato dessert where you re-bake a mixture of mashed sweet potato, milk, egg and sugar until it’s golden brown! I wanted to make it into a tart and adding hearts = Valentine’s Day right? 😅
I do think it looks less like a quiche at the end once it cooled down though 🤣

The food village of my dreams — VISON! ✨ 夢の美食の村ビゾン!

This beautiful area in the Mie Prefecture has always been on my list of places I wanted to visit in Japan. I first learned about it on TV and it was created to bring more people to Mie to experience the incredible food and culture here. They’ve invited chefs from all over Japan and hand selected local shops to come here and serve food using local Mie ingredients and I think I need to visit at least 10 more times to be able to try everything on the menu! It was so hard to decide what to eat because EVERYTHING looked amazing!
My favorite area in particular was the “Wa-VISON” or “Japan-VISON” area where they have brought together traditional miso, mirin, vinegar, pickled veggie, dashi shops that have all been using methods passed down from generation to generation. I got to watch mirin being made for the first time in my life (thank you @kenta_mouri!) and saw the amount of care they put into creating their high quality products. You get to taste so many things in all of the shops and I had never tasted so many new flavors in such a short span!
Places like these remind me there are so many Japanese foods I still have yet to discover and it makes my heart sparkle!!! ✨

三重県にあるビゾンは、ずっと行きたいと思っていた場所。テレビで初めて見て、三重の食文化を体験してもらおうと作られた場所。美食の村とも呼ばれているらしい！
日本各地からシェフが集まって、地元の食材を使った料理を提供していて、メニューがどれも美味しそうすぎて、何を食べるか決めるのが大変だった！あと最低でも10回は来ないと全部食べれない！！

特にお気に入りだったのは「ワ・ヴィソン」エリア。ここでは、伝統的な味噌、みりん、酢、漬物、出汁を作っているお店が集まっていて、どれも代々受け継がれてきた製法を守って作られていて本当に全部美味しい！
初めてみりんを作っているところも見学できて (@kenta_mouri さん、ありがとう！）、どれだけ丁寧に高品質なものを作っているかを実感したよ。
たくさんの味を試せて、こんなに短い時間で新しい味に出会うのは初めてだった！

こんな素敵な場所に来ると、まだまだ知らない日本の食べ物がいっぱいあることに気づいて、心がキラキラしちゃう！✨

Today is Setsubun in Japan and we eat ehomaki which are long sushi rolls filled with a variety of fish, meat and veggies! When written out in Japanese, ehomaki is 恵方巻 and it directly translates to “blessing direction roll”.
Setsubun celebrates the end of winter and beginning of spring so it’s just another way we continue to wish for a year filled with happiness and health!
Did anyone else eat ehomaki on Setsubun?! If so, how did it go?!

ペンギン🐧 に見えると思ってたけど外から見たら強盗にも見えそう😅

I had been seeing these unmanned gyoza shops throughout the city and I’ve ALWAYS wanted to try it! Decided to go in when it was cold outside so the frozen gyoza doesn’t melt by the time I get home (aka winter but my face almost froze it was too cold🥶)

Anyways, I did some research on these frozen gyoza, and apparently, they are based on the popular gyoza dish that was served in a restaurant called “Yukimatsu Shokudo” in the Gunma prefecture.
The owner had his secret gyoza recipe that was passed down from generation to generation, and when the last owner didn’t have anyone to pass the recipe down to, they decided to develop a frozen gyoza so that people could continue to enjoy the gyoza across Japan. After Gyoza Yukimatsu was a hit, they made it into unmanned shops throughout Japan which would allow as many people to walk in and buy gyoza (also ramen now) whenever they wanted. It’s also a fun little experience 🙃

I think I need to go back and try the ramen too! Maybe I’ll bus next time though 😂

最近、街中で見かける無人餃子屋にずっと興味があって、やっと試してみた！冷凍餃子が溶けないように、寒い時期に行くことにしたんだけど、外が寒すぎて顔が凍りそうだった🥶

調べてみたら、この餃子は群馬県の「雪松食堂」っていうお店の秘伝の人気餃子がベースなんだって。お店のオーナーが代々受け継いできた秘伝のレシピがあって、最後のオーナーが後を継ぐ人がいなくて、全国の人にも楽しんでもらえるように冷凍餃子を作ったんだって。それが大ヒットして、今では無人店舗で餃子（そしてラーメンも！）が買えるようになったんだって！無人のお店で買うって体験も面白いし🙃

次はラーメンも試してみようかな！次回はバスで行こうw

FULL of yummy food in 2024 and hungry for another

FULL of yummy food in 2024 and hungry for another year of fun in 2025 :)

This year was filled with the highest of highs as well as some pretty low lows — but I think that’s the sign of a solid year and lots and lots of growth :)
I spent most of this year injured which was so incredibly tough, but it makes me thankful for a healthy body now!
I’m especially grateful for everyone single one of you here who takes time out of your day to watch and engage with my content and some have even made my recipes! 🥹
This year flew by a liiiittle too fast for me, but it’s always fun getting to look back and remember all of the fun people I got to spend time with this year and eat goooood food!
Cheers to this next year that I hope is going to be full of more fun, travel, family, friends and GOOD food!

It’s been a crazy few weeks since being back in Japan and it’s fun and exciting but also overwhelming and tiring at times — I feel like December always has a way of being a liiiittle too full and I can’t believe 2024 is almost over…
Took a trip to Osaka and Kyoto and forgot how much I love both of those places! Spent time with wonderful friends and ate some delicioussssss meals that I can’t wait to share more about in the next few weeks (which may be in 2025 — sorry!!)
I’m in my “ahhh I still need to get so much done before the year ends” phase and it’s a bit stressful 🫠 can anyone relate?
Something about feeling to tie a pretty bow on this year and look back on everything is a LOT and I’m reminding myself to just take it all one day at a time — things will still be here in a few days when it’s 2025 — I know that’s easier said than done 😂 but I’m trying to give myself permission to let things go, at least for now and file it under 2025 Lina tasks 😅

I hope we all collectively take a biiiig long breath today and eat some yummy food :)

最近は大阪と京都に行ってきて、改めて大好きだなぁって実感！素敵な友達とも時間を過ごせて、美味しいご飯もたくさん食べて、次の数週間でそのことをシェアするのが楽しみです（多分2025年になっちゃうかも…ごめんね！）
今、「年末までにやること多すぎ！」って感じでちょっと焦ってる🫠 みんなもこんな感じ？
いろんなことがあった一年をきれいにまとめるって結構大変だよね〜
一日一日頑張ろうって自分に言い聞かせてます！2025年になったらやること変わらないしね！それは簡単に言えるけど、実際は難しいよね（笑）でも今はちょっとだけ手放して、2025年のタスクに回してもいいかなと思ってます😅

みんなで深呼吸して、美味しいご飯でも食べようね！:)

母の有名な抹茶マーブルのバター餅ケーキ！

I have been making this cake for the last few years every time I’m back in Colorado and I finally found my mom’s original recipe! SO many people were interested in this cake and my mom was so thrilled 😊

My friend at @hexacustom gifted me this wonderful jacket and I wanted to go deliver a little sweet afternoon treat while wearing it! It’s so warm and I got to design this entire jacket down to the zipper colors 🤩 this isn’t paid or sponsored — I just love their items and think their entirely women-led team is amazing!

Yes that’s BUTTERCREAM!! Are you kidding me I can’t believe I can eat this too 🥹

Don’t knock it until you try it (the slippers I mean and the pumpkin madeleine 😉)
試してみるまで批判しないでね（スリッパのこと、でもパンプキン・マドレーヌのこともね 😉)

Pumpkin Madeleines (with rice flour!)
パンプキン・マドレーヌ (米粉で！)
Ingredients:
[A]
• 1 egg
• 10g pumpkin puree
• 45g sugar
• Vanilla bean extract
[B]
• 50g rice flour
• 10g almond flour
• 2g baking powder
• 1 tsp cinnamon
[C]
• 50g melted butter
[D]
• A bit of butter to prep the Madeleine tray
Note: You’ll need a Madeleine tray! Make sure to butter it before adding the batter.

材料：
[A]
• 卵：1個
• かぼちゃピューレ：10g
• 砂糖：45g
• バニラビーンズエキス：適量
[B]
• 米粉：50g
• アーモンドプードル：10g
• ベーキングパウダー：2g
• シナモン：小さじ1
[C]
• 溶かしバター：50g
[D]
• マドレーヌ型用のバター：少々
※ マドレーヌ型は必須です！型に生地を流し込む前にバターを塗っておきましょう。

Instructions:
1. Preheat your oven to 340°F (170°C).
2. Butter your Madeleine tray.
3. Melt the [C] butter in 30-second increments until fully melted, then let it cool.
4. Mix together all the [A] ingredients until just incorporated.
5. Sift [B] into the wet [A] mixture, and fold until streaks of flour remain (don’t overmix).
6. Pour in the melted butter and fold it into the batter.
7. Spoon the batter into the Madeleine mold, filling about 70% of each cavity (don’t overfill!).
8. Bake for 15 minutes or until the edges are crispy.
9. Remove from the oven, flip the tray, and transfer the Madeleines to a cooling rack immediately.
10. Itadakimasu!

作り方：
1. オーブンを170℃（340℉）に予熱します。
2. マドレーヌ型にバターを塗ります。
3. [C] のバターを30秒ごとにレンジで溶かし、冷ましておきます。
4. [A] の材料を全てボウルに入れ、混ぜ合わせます（混ぜすぎないように注意）。
5. [B] の材料をふるいにかけて[A]のボウルに加え、白い筋が少し残る程度にさっくり混ぜます（混ぜすぎないように注意）。
6. 冷ましたバターを加え、均一になるまで生地に折り込むように混ぜます。
7. マドレーヌ型の7割程度まで生地を流し込みます（入れすぎに注意）。
8. オーブンで15分焼きます。縁がカリッとなったら焼き上がりです。
9. 焼きあがったらすぐに型から外し、冷却ラックの上で冷まします。
10. いただきます！

I have been on a radio show in Japan called Radio Fuchues every Monday for the last few weeks and this week I promised that I would share photos from my Thanksgiving FEAST! I’m just explaining some of the dishes we eat in the US during Thanksgiving, but I’m still trying to get used to hearing myself speak Japanese more! 😅

I went over to my sweet friend Alexa’s place and I brought the most non-thanksgiving dessert of a tiramisu 🤣 but it’s because my friend (who is celiac) had never eaten a gluten free tiramisu and everyone must eat tiramisu at some point in their lives right?!?!

I used my mom’s amazing tiramisu cream recipe and made a gluten free Japanese castella cake instead of lady fingers and I think it was a hit!
Also lol at the audio when I’m assembling the tiramisu 🤣 now I need to try sous vide🧑‍🍳

A fun and delicious day of eating and we were melting into the couch at the end of the day to prove it! ❤️

私は親友のアレクサの家に行って、サンクスギビングっぽくないデザート、ティラミスを持っていきました🤣 でも、小麦アレルギーの友達がグルテンフリーのティラミスを食べたことがなかったので、みんな一度はティラミスを食べないとね！と思って❤️

私のお母さんの素晴らしいティラミスクリームのレシピを使って、グルテンフリーの日本のカステラケーキで代用し、みんなに好評だったと思います！
それにしても、ティラミスを作っている時の友達のお母さんの言ってることが面白すぎ🤣 そして、次は sous vide に挑戦したいな🧑‍🍳

楽しくて美味しい1日で、最後はソファに溶け込んでいました❤️
