This Japanese “drinkable beauty serum” called

This Japanese “drinkable beauty serum” called amazake has been a staple for me ever since I started my Japanese food fermentation series ✨

If you’re new here, hi! 👋 I’m Lina — a food fermentation instructor who is slightly obsessed with all things koji (Japan’s national mold) 🍚

Today we’re making amazake, a traditional Japanese fermented rice drink that’s naturally sweet and full of enzymes, amino acids, vitamin B, and folic acid. It’s often said to support skin health, digestion, and immunity!

But honestly, health benefits aside, I just love the flavor. Amazake has this naturally sweet, creamy taste that adds such a beautiful depth of flavor to cooking and baking, which is why I love using it in so many recipes.

In this video I’m partnering again with @gohan_japan_tanica to show you their amazake enzyme, which makes the whole process so easy.

All you need to do is mix rice and water, sprinkle the enzyme on top, and let it ferment at 60°C for 6 hours using the Yogurtia fermentation device.

⚠️ Quick tip if you try making this:
If the rice is too hot, the enzymes won’t work properly. Just mix in the water first so the rice cools down a bit before adding the amazake enzyme.

For this batch I used 50ml of water, which creates the sweetest and creamiest amazake. I especially love this consistency when using amazake for baking and cooking 🍰

PART 2 of trying to recreate the unforgettable Ronchanty which was this chocolate strawberry cream dessert that I got at the Amour du Chocolat which is the largest Valentine’s Day chocolate festival in Japan!

Not sure why I was so surprised the most simple whipped cream would taste the most similar to the original 😂 but I had to try out the different flavors just for fun as well 🙃

結局いちばんシンプルなホイップクリームが一番オリジナルに近かったのは、なんであんなに驚いたんだろう😂
でもせっかくなので、いろんな味も試してみました🙃

My Grandma Kazu was a Japanese geisha doll maker f

My Grandma Kazu was a Japanese geisha doll maker for over 70 years, and she even started her own doll-making company while raising three kids. She was invited to do live demonstrations around the world, and the dolls she created received many awards and are now displayed in exhibits and homes worldwide!
At a time when very few women owned businesses, she took risks and paved her own path. She chased her dreams and truly showed me what it means to live life to the fullest✨

Growing up in the US, I didn’t get to spend much time with my grandparents, so moving to Japan four years ago and finally getting to live with and take care of Grandma Kazu meant everything to me. Many of you found my page through the videos I would post with her and she loved seeing people comment from all over the world!💕
Taste tests with her were so fun and cooking for her was my absolute favorite because she just loved to eat and she would praise my cooking SO much haha 🥹

After being diagnosed with cancer last year, her health declined quickly, but she would always give me the biggest smile and talk about how blessed of a life she had lived 🥲

Grandma Kazu,
Moving to Japan to spend time with you was one of the best decisions of my life, and I will forever be thankful for the memories we got to share.
You have always been my biggest cheerleader, and I hope I can continue to make you proud.
I’ll miss you more than you will ever know, but I know you’re watching over me always ❤️

おばあちゃんは、70年以上日本人形を作り続けてきた人形師で、3人の子どもを育てながら自分の人形の会社も立ち上げました。世界各地に招かれて実演をすることもあり、おばあちゃんが作った人形はたくさんの賞を受賞していて、今も世界中の展示やお家に飾られています。

あの時代に自分の会社を持つ女性はまだ少なくて、おばあちゃんは自分の道を切り開いてきた人で、本当にすごいと思います。夢を追いかけて、常に人生を楽しんでいました✨

私はアメリカで育ったので、子どもの頃は祖父母と過ごす時間があまり多くありませんでした。だから4年前に日本に引っ越してきて、おばあちゃんと一緒に暮らしてそばで過ごせた時間は私にとって本当に特別でした。
おばあちゃんとの動画で私のページを見つけてくれた方も多いと思います。世界中の人がコメントしてくれるのを、おばあちゃんもとても喜んでいました！💕

味見動画も楽しかったし、食べることが大好きなおばあちゃんのために料理を作るのも楽しくて、私の料理もいつもたくさん褒めてくれました🥹

去年ガンと診断されてから体調は急に悪くなってしまいましたが、それでもいつも大きな笑顔で「本当に幸せな人生だった」と話してくれていました🥲

おばあちゃん、

おばあちゃんと過ごすために日本に来たことは、私の人生で一番よかった決断の一つです。
一緒に過ごした時間や思い出は、これからもずっとずっと大切な宝物です。
きっと今も空の上から見守ってくれているよね❤️

I got the courage to go to Amour du Chocolat again this year which is the largest valentine’s day chocolate festival in Japan at the Takashimaya mall in Nagoya. The lines here are INSANE it feels like I am at an amusement park!

Thankfully my cousin was my tour guide this year and showed me some of her favorites that I will do a taste test of in my next video! ✨

Apparently the idea behind closing your eyes or not speaking while you eat the ehomaki is to make sure the luck doesn’t escape you 😅 which is also why after you throw the roasted soybeans out the door or window, you want to quickly close the door or window to not let any of the luck out! Okay luck move a little slower please! 🫠😂
Anyways, happy spring 🌸 and wish me luck on building up all of my luck instead for this year a different way! ✨

Crunchy lotus root coated in a nutty sesame soy glaze — one of my favorite side dishes! My mom made this for me once and I immediately asked her to teach me how to make it. The key is using lots of white sesame seeds!!

Which is the ultimate Japanese sweet potato type as a yakiimo (slow roasted sweet potato)?! 🍠
焼き芋にしたとき、究極の日本のさつまいもはどれ？？🍠

There are apparently over 40 different kinds of Japanese sweet potatoes with different textures like “hoku hoku” (drier/flaky), “nettori” (sticky), or shittori (smooth).
This year I am hoping to try as many sweet potato varieties as I can find but so far Beni Azuma and Beni Haruka are the ones I see the most often at the grocery store — maybe I need to go visit a sweet potato farmer 🤣

My 2026 osechi! ⭐️ 2026のおせちです！

Happy new year everyone! 🎍 Thankful for another year of getting to talk about all things food with you and excited for all the yummy food we’ll get to eat this year! 🤩
My personal favorite is the “Kuromame” where I followed my 83-year-old neighbor’s recipe and it comes out perfect every time!
I also made sweetened kumquats for the first time this year and LOVED IT so I will be making this for my osechi every year moving forward.

The reason why I started making my family’s osechi every year is because I wanted more of each item and to be able to season it the way we like (aka make things a little less sweet lol). Now it’s become a yearly tradition that is so time consuming but I love that I feel like I am getting a little bit better every year and my flower carrots are getting less pointy and intense so that’s a good sign!

Are there items you like in particular in your osechi? (Or don’t like? 😂) I want to know!!

Otsukare (“good work”) in 2025 and let’s ganbare (“do our best”) in 2026!! 🤍

今年もみなさんと食べものの話をたくさんできたことに感謝しつつ、これから一年おいしいものをたくさん食べられるのが楽しみです🤩

いちばんのお気に入りは黒豆。
83歳の大好きなご近所さんに教えてもらったレシピで作っていて、毎年安定のおいしさです。
今年は初めて金柑の甘露煮にも挑戦してみたのですが、これが大ヒット…！
これからは毎年おせちに入れたい一品になります！

私が毎年家族のおせちを作るようになった理由は、それぞれをもっとたくさん食べたかったのと、味付けを自分たち好みにしたかったから（甘さ控えめが好きなので😂）。
今ではかなり時間のかかる毎年の恒例行事になりましたが、少しずつ上達しているのを感じられるのがうれしいです。
花にんじんも、だんだん尖りすぎなくなってきたので、いい成長かなとww

Finally a video on how to make the cake I make for everyone I love! 🤍
This Japanese-style strawberry shortcake was what my mom made me every year for my birthday because I didn’t love the frosting cakes in the U.S.
Now I get to make it for her every year during the holidays, and it’s become one of my favorite family traditions!

Soft, fluffy sponge cake, lightly sweetened whipped cream, and fresh strawberries — simple, not too sweet, and honestly perfect💕
I walk through the whole process in this video, so even if you’ve never made a sponge cake before, you can follow along!

The ingredients are listed below and the full recipe is up on my blog!

Ingredients
[Sponge Cake]
• 160 g whole eggs
• 100 g granulated sugar
• 7 g honey
• 100 g cake flour
• 26 g unsalted butter
• 26 g milk
• Vanilla extract and/or vanilla bean paste

[Simple Syrup]
• 2 tbsp granulated sugar
• 4 tbsp water
• 1 tbsp kirsch (optional)

[Whipped Cream]
• 290 g heavy cream
• 16 g sugar

[Filling & Topping]
• Fresh strawberries
• Powdered sugar (optional)
• Cake toppers or candles (optional)

これは大切な人のためにいつも作るケーキの動画がやっとできた🤍
このいちごショートケーキは、アメリカのフロスティングたっぷりのケーキがあまり好きじゃなかった私のために、子どもの頃から母が毎年誕生日に作ってくれていたケーキです。
今では私が母のために毎年ホリデーシーズンに作るようになり、家族の大切な定番になりました！

ふわふわのスポンジに、甘さ控えめの生クリーム、そしてフレッシュないちご。
シンプルだけど、やっぱりこれがいちばん💕

動画では最初から最後まで工程を紹介しているので、スポンジケーキが初めての方でも安心して作れます！
材料は下にまとめていて、詳しいレシピはブログに載せています🍓

材料
［スポンジケーキ］
・全卵 160g
・グラニュー糖 100g
・はちみつ 7g
・薄力粉 100g
・無塩バター 26g
・牛乳 26g
・バニラエクストラクトまたはバニラビーンズペースト

［シンプルシロップ］
・グラニュー糖大さじ2
・水大さじ4
・キルシュ大さじ1（任意）

［生クリーム］
・生クリーム 290g
・砂糖 16g

［フィリング・トッピング］
・いちご
・粉糖（任意）
・ケーキトッパー・キャンドル（任意）

Little Lina would be squealing knowing I now have my very own custom charm bracelet 🥹✨
People who know me know I’ve always loved all things sky — stars, the sun, the moon, clouds. I think it’s because the sky always felt so big and limitless. ⭐️
Looking up has always brought me so much peace, and I wanted to carry that feeling with me when I got to make this bracelet at Pandora! 🤩
When I first got certified to be a yoga instructor a few years back, there was a lot of focus on sun and moon — light and dark as balance — and the idea that you can’t have one without the other. That idea has really been sticking with me during this season of incredibly tough moments and unbelievably joyful ones, too.
Lately, as grief has been a bigger theme in my life and everything feels like it’s moving at 100 miles an hour, I’ve found myself looking up at the sky more than usual and am reminded there is so much more than what’s right in front of me and we only can take it one day at a time 💕
One of the mixed metal charms holds the phrase 試練を乗り越えて輝く, which means “to shine through adversity,” and it’s felt like a small comfort during a tender season.
As the year winds down and everything seems to pile on at once, I’m hoping we can all be a little gentler with ourselves this season 🤍

小さい頃から空が好き。
星とか太陽とか月とか雲とか✨見上げると落ち着くし、気持ちが少し軽くなる。

You can’t celebrate Christmas in Japan without a cake! My personal favorite is the classic Japanese strawberry shortcake! 🍰🎄⭐️

I look forward to baking my family a Christmas cake every year, but it’s been so busy with my grandma that I didn’t think I’d get to this year! Feeling extra grateful for time in the kitchen baking for the people I love and am reminded how much joy baking brings me 💕

Warning: I didn’t follow the original kabocha mitarashi dango recipe exactly, but I am posting the photo of it along with writing up the one I made (in English and Japanese) since it was highly requested! 🥰
My mom finds it so funny that people are interested in recipes she collected over 45 years ago! She doesn’t even know who wrote it but it’s fun to look at the Japanese food someone was making 🤩

I will be testing it again with steaming or cooking the kabocha first (instead of grating it) so if you want the refined and tested recipe, I’ll have it for you next week!

元のかぼちゃみたらし団子のレシピをそのまま作ったわけじゃないんですが、リクエストがすごく多かったので、レシピの写真と、私が実際に作ったバージョン（英語＆日本語）をまとめて載せておきます🥰 母は「そんなにレシピに興味ある人いるの？」って大笑いしてました笑 45年以上前に集めたレシピらしく、誰が書いたのかも覚えていないそうなんですが、当時どんな日本食を作っていたのか見るのって楽しいですよね🤩
